milk, culture: again
At the beginning of undertaking to make a place into a true farm, where sunlight is woven by plants and animals into food, it helps to remember that life processes proceed at their own pace. We do not assemble them from inert parts and then, when all the pieces are connected, start them up and watch them hum; no, instead we observe, intuit, encourage, observe again. We serve. And the more we accept the right of the life of a place to its own being and nature, the richer our encounter with it.
Which is to say, don't give up when your milk ferments aren't utterly delicious; they have their own life and logic to follow, stick with them, they're growing into something wonderful.
