milk oddities
Sometimes you'll see dark flecks on the surface of a bucket of milk. It might look like bits of crushed dried leaves, dark green-brown dots floating in the white. Funny thing -- it's milk fat, separated out, stained by some plant in the cow's most recent meal. Reach a finger in and try to catch a bit -- it's not solid or fibrous, it's just fat -- it will smear between your fingers, or on the side of the bucket. When you strain the milk, the stained fat either passes right through or is caught in the filter -- at any rate, it goes away. It doesn't change the flavor of the milk, either.
