Keeping a family cow on grass has evangelical results. Our paeans used to fall on deaf ears; now lots more folks are doing it.

No wonder: sunlight and rainfall are free. Dairy cows convert these into proteins, fats and sugars in real time; and when care is taken, their pastures are improved by the very act that feeds them. A little care, a little attention -- and a whole ecosystem comes into being, with the centerpiece being human-managed bovines. Milk, butter, cheese, steaks, chops, eggs, vegs -- all bountiful, all free.
