It's nice to have magazine-perfect pictures of the potato patch to remind us that the four-foot ragweed and amaranth that cover it now are only camouflage for the excellent crop of potatoes below; otherwise, we might despair that the jungle that faces us could possibly hide mountains of perfect, glossy-skinned Kennebec, Pontiac, and Yukon Gold.

The most comfortable provision we know for a year of excellent eating is a dairy cow on good grass pasture and a root cellar full of potatoes.
