really pastured turkeys

We run turkeys in the fenced orchard until they are big enough that we no longer worry about the local fox; then they have the run of the farm.  Their feed is fermented or sprouted wheat, raw milk curds, beef and pork butchering scraps, plus whatever they pick up around the farm.  Turkeys eat whatever fruit and vegetables they can get a hold of, plus grass, worms, bugs, and pretty much anything else.This turkey cock and hen weighed in at 43 and 26 pounds respectively, dressed out.  We spatchcocked the male two days before Christmas and hung the halves in the smokehouse in a cloud of cherry smoke for twelve hours.  They were finished in the house, overflowing their pans and testing the capacity of our oven, and made the richest, juiciest, most delicious meat that has ever graced our Christmas table.
