milk and the independent farm

This visit to Italy is reaffirming everything we already know about the immense significance of dairy in a sustainable, regenerative human food system.  We're really looking forward to our January workshops!  Permanent pasture plant communities, rationally grazed, are the most significant way we know to grow food -- for animals and humans -- and fertility at the same time.  The daily harvest of sunlight that is possible when ruminants convert forage -- grass -- to milk, is like the flour and oil jars that fed Elijah and the widow of Zeraphath and her son -- a source of food that never runs out.
